Flavor release is a key element in the deliciousness of food and beverages. Using our proprietary technologies, we conduct analysis and evaluation on the balance, release and persistence of the retronasal odor that passes into the nose from the throat when eating and drinking.

DAS® (Drinking Aroma Simulator)

DAS

DAS® is an artificial-throat-type simulator capable of reproducing the retronasal odor that passes into the nose from the throat when eating and drinking. When the base changes as carbonated beverages or as alcoholic beverages, flavor balance, release and persistence will also change. Using DAS® to address phenomena that were previously only processed via the senses enables digitization of flavor release characteristics for a wide variety of beverages, and serves to advance explanation of the mechanisms involved.

Mastication Model Device

We sense retronasal odor while chewing, as well as when swallowing food. Our mastication model device is a simulator that reproduces this flavor release that occurs while chewing.
