Gamma lactones are common in fruits, and Gamma Valerolactone has an odor profile of hay and tobacco with five carbon atoms. However, as the number of carbon atoms rises, the odor transforms first into a coumarin-like profile (like the cherry blossom leaves included in sakura-mochi rice cakes), then coconut-like and peach-like profiles.

In contrast, delta lactones are common in dairy products. DeltaHexalactone has a flowery almond odor profile with six carbon atoms, but as the number of carbon atoms increases the odor transforms into first coconut-like and then milky and creamy odor profiles.
