"Research on Characteristic Odor Components of Yuzu Citrus" announced
at the 59th Annual Symposium on the Chemistry of Terpenes, Essential Oils, and Aromatics.

This study explored the characteristic odor components of yuzu citrus using two of our proprietary, patented compound odor evaluation technologies: "Orthonasal-AROMATCH®" and "Retronasal-AROMATCH®." Components contributing to yuzu citrus odor were identified using these technologies, and results were obtained showing the relationship between odor and taste. Also, as methyl jasmonate was shown to have marked yuzu-citrus-flavor enhancing effects, optical isomer analysis was conducted using Orthonasal-AROMATCH® which uses chiral columns.

Furthermore, these research results were presented orally at the 59th Annual Symposium on the Chemistry of Terpenes, Essential Oils, and Aromatics (2015) under the title "Research on Characteristic Odor Components of Yuzu Citrus."
